Orange Cake. Vegan or not you’ll love this.

501884430_41672ece99I love this cake.  Most people aren’t all that thrilled with the idea of an orange cake, but I’ve never had anyone NOT like it once they tried it.  It goes really well with vanilla icing or maple icing.

Preheat oven to 350°.  Grease or line with parchment paper a standard round or 8 x 8 inch square pan.

In a large bowl whisk together:

  • 1 ½ cups all purpose flour
  • 1 cup sugar
  • 1 tsp baking soda
  • ½ tsp salt

In a medium mixing bowl (or I use a large measuring cup) mix together:

  • 1 cup orange juice
  • 1/3 cup vegetable oil
  • 1 tbsp vinegar
  • 1 tsp vanilla

Pour wet ingredients into dry and whisk until smooth.  Pour into cake pan and bake 30 to 35 minutes or until a toothpick comes out clean.

    OK, so I made this tonight. It was great (and sooo simple! Just what I need). I used whole wheat flour… and with that mod, I’d use less oil next time, as it was a bit too dense for my taste… Keep on posting… what about that great recipe you have for baked tofu or that brocoli and sesame salad? You should start thinking… cookbook!!

    OK, I am trying this now with orange marmalade instead of orange juice. I ended up adding the juice of half an orange, because the consistency wasn’t right…I’ll update with results – fingers crossed!

    Verdict is: the taste is good, the consistency is off. I have an old, pioneer recipe for jamcake (I made it just last week), and in future I will use that recipe when I want a marmalade cake.

    However, my family is usually happy to be on the receiving end of my food experiments…so no worries!

    I replaced the sugar with a mix of honey and agave and cut back on it a bit. Even my non-vegan family loved it. I’m so happy to find a vegan cake that actually is moist and has flavor. Thx!!

    I’ve just made this cake, but it went brown within 10 minutes and it’s just not cooking in the middle, I re-checked my ingredients and they were all correct!

    I didn’t have any non-balsamic vinegar, so I just left it out, and actually it didn’t seem to miss it.

    Just tried this recipe … have no measuring cups here in Tunisia….and didn’t have vinegar at the house. I just took it out of the oven and it smells great! :) Hoping it tastes just as amazing!

      So- it ended up being super moist and tasted really delicious….but, it was crumbly. I might not have cooked it long enough ….or does the vinegar help with that part? Either way – it was all eaten already! :P

    I just tried this cake in a very healthy version! I used whole wheat pastry flour instead of regular one, and I have put less than a sixth of a teaspoon of white powered stevia extract instead of sugar… As the mix was a little more wet (taking out the sugar generally does that…), I added something like a third cup of white unbleached flour… And I added the zest of two oranges… and it was a really, really good cake! It tastes amazing for such a simple recipe…

    It was a little tiny bit dry, but I cannot blame the recipe with all my modifications… I was told that adding an egg-replacer (like flax) might help…
